Bavarian Stuffed Celery Sticks

(celery sticks stuffed with cream cheese,
olives ,paprika )

These Bavarian-inspired stuffed celery sticks are an easy picnic appetizer with an old-school deli feel and just enough beer-garden flavor to make them memorable. Cream cheese, bacon, olives, Dijon mustard, and Maggi seasoning come together in a savory filling that gets finished with crunchy crushed pretzels and a dusting of paprika. Packed into a simple glass container, they travel beautifully for picnics, cookouts, potlucks, or a relaxed summer lunch by the river.

Makes about 12 stuffed 6-inch celery sticks

8 oz cream cheese, softened (226 g)
1/3 cup chopped pimento-stuffed green olives (50 g)
4 slices bacon, cooked crisp and finely chopped (about 60 g)
2 green onions, finely sliced (30 g)
1 tsp Dijon mustard (5 mL)
1/4 tsp Maggi seasoning or 1/2 tsp Worcestershire sauce (1 to 2.5 mL)
1/4 tsp sweet paprika, plus more for garnish (0.5 g)
Fresh cracked black pepper, to taste
1/3 cup crushed pretzels (35 g)
12 celery sticks, about 6 inches long

1. Wash and dry the celery well. Chill until ready to fill.



2. In a medium bowl, combine the softened cream cheese, chopped olives, bacon, green onions, Dijon mustard, Maggi seasoning or Worcestershire sauce, paprika, and black pepper.

 


  1. 3. Stir until the filling is creamy but still has a little texture from the bacon and olives.

 

4. Spoon or pipe the filling generously into the celery "channels".

5. Sprinkle the tops with crushed pretzels and a light dusting of paprika.


6. Chill for at least 30 minutes before serving so the filling firms slightly and the flavors come together.

Biography of my grandma
Emma Block

From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
