Our German Recipe Cookbook

Ingredients:

1 head of Cauliflower
or 4 cups grated cauliflower
1 oz grated parmesan cheese
1/4 cup flour, more if needed
2 eggs
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon grated nutmeg

1. Simmer the cauliflower in water with 1/4 teaspoon of the salt for 1 minute, drain and squeeze out as much water as possible.
Mix the cauliflower with the grated parmesan.

2. Add to the mix the eggs, flour,baking powder, pepper and nutmeg and stir to make a nice dough that is not too stiff. Add the other 1/4 teaspoon salt.

. Add flour by the tablespoon if you need to get a loose dough. Continue to stir.

3.Here is a set up I use. You can create your own. I made a pie pan with holes. I put about 2 cups water in the bottom of this panI then oil the top and take a teaspoon of dough and scrape onto the pan. . You can also just use a small amount ot water. these dumplings are delicate so I don't boil them in water.

Steam the Spaetzle for 5 minutes.

4. The spaetzle will be done when they feel firm. The will be a bit puffy as well. Repeat this process with the rest of the dough.

If you like you can snip the finished dumplings.

These have a nice texture and can be reheated well. You have replaced 70 percent or so of the flour with cauliflower.
