Dough:
1 cup White Whole Wheat Flour
1 cup Greek Yogurt
2 tsp baking powder
1 teaspoon salt.

Toppings:
1/4 cup Black Beans
1/4  cup Mozzarella (no fat or low fat)
1/4  cup Marinara sauce
Handfull fresh spinach leaves
4-5 slices low fat Pepperoni
1 oz cooked turkey sausage crumbles ( low fat)
5 Cherry tomatoes cut in half
Artichoke hearts
1 Egg

Pre heat oven to 450 degrees with a pizza stone on the center rack.

 

Directions:


1. Make the dough by first blending the dry ingredients together then with the yogurt and keep blending till the you get a dough. If it is too sticky add tablespoon of flour at time.

 

 

2. Roll a chunk of dough a little larger than a golf ball into any shape you like, I chose an oblong shape. Get the dough just as thin as you can, and still lift the dough up. Place the dough on a floured board or use cornmeal, test to see that the crust can slice off the board and onto the oven stone.

3.  I like to cook ahead some turkey sausage into crumbles and freeze them spread out on a sheet, then bag them, this way they don’t stick together.

3. Start with the Black Beans, I mushed them up slightly to make a chunky spread, sprinkle on the cheese then spoon on the marinara. Then sprinkle the spinach leaves and then the pepperoni, sausage crumbles and tomato halves.

4. Make a well in the center and crack the egg in there.

 

5. Carefully slide the pizza onto the baking stone using a turner if that helps. Bake for 15 minutes till the crust is brown and the egg is cooked either soft or hard. You can shake it a bit to see if the whites are set.

On this pizza I cooked the spinach first with fresh garlic and a bit of olive oil. I also used artichoke hearts.
I also grated a bit of parmesan over the top.
