Stuffed Mini Meatloafs

(with Bacon, Cheddar and Green Onion Stuffing)

Semmelknoedel is a popular dumpling in Germany, and a good way to use left over bread.
This recipe uses the Semmelknodel as a stuffing in a basic meatloaf recipe.
The bacon and cheddar really bump this up to a German-American Meatloaf.

Meatloaf Mix:
1 lb Ground Beef Pork or Turkey
1 cup chopped Onion
1 egg
1/2 cup Oatmeal
2 slices Bread soaked in Milk
1/2 teaspoon Salt
1/2 teaspoon Pepper

Stuffing Mix:
2 slices Cubed Bread
8 slices cooked Bacon chopped
1 cup Cheddar Cheese
1/2 cup Green Onions
2 eggs

Glaze:
1 - 1-1/2 cups Catsup

1. Mix the meatloaf mix on one bowl....

and the dressing ingredients in another.

 

Divide the meatloaf mix in half, and then make any size you want. I divided each half into 7 balls.

Put a mound of the dressing mix in the center.

Make a patty of the other balls and fashion on top to cover. and press the edges together with a fork.

 

 

Brush Catsup on for the glaze and bake on the BBQ or oven for about 30- 45 min at 350 degrees until you have an internal temperature of 160 degrees.

 

Ready to Serve

You can also make Mini Meatloaves in small pans

Using different glazes and stuffings, and on these different toppings, weaving bacon, sliced pickles and peppers

A muffin tin makes excellent individual meat loaves and can be frozen for later.

Biography of my grandma
Emma Block
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
