Labskaus
Beef Hash with Beets

This is a popular dish in Bremen, in Northern Germany. The word Labskaus may have it's roots in a slang term for a sailor. This dish was popular for the sailors and dock workers and remains to this day.


Ingredients:                              
1 large onion chopped about 1 1/2 cups
1 /2 lb bacon chopped 1 / 2 inch pieces
6 bratwursts
2 lbs approx of potatoes (enough to fill the pot.

4 Tablespoons fresh Marjoram , or use 2 Tablespoons dried Marjoram ( you can substitute Time.
4 Tablespoons of fresh parsley

2 cups Chicken Stock
2 cups apple juice or hard apple cider

Take the leaves off the Marjoram by pushing backward on the stem. Sort of like petting a cat backwards.
