Fisch Broetchen

(German Style Breaded Fish Sandwichl)
with Remoulade Sauce

 

Fisch Broetchen, German fish Sandwich air fried.

I use to order FIsh and Chips all the time in a restaurant because it was something I would never cook at home with all the deep fat frying, and mess. That has since changed with the Air Fryer. With a simple breading, I can air fry fish filets, and they come out nicely browned, crispy and flaky tender, without the heaviness!

I love a good fish sandwich also, and so does Germany, especially the Northern Germans that live next to a great seafood resource, the Northern Sea. They also love putting nice pickled Herring filets between a Broetchen. I am still working up the courage to try that.

This will make about 4 Fisch Broetchen Sandwiches, depending on the size of your roll.

Ingredients:

2 8-10 oz Fish Filets
Cod, Tilapia, Snapper, any good whitefish

Breadimg:

1/2 cup Cornstarch or Flour
1 cup Breadcrumbs
1 tablesp Season Salt
1 Egg
1 cup milk or water
1 tablsp Worchestershire Sauce

4 Broetchen
Lettuce
1 cup Remoulade Sauce

can substitute Tartar Sauce

Basic, the one I use.
Doesn't take up much space.

Cutting fish flets for the sandwich.

Cut the fish in the size pieces that will fit nicely in the Broetchen that you are using.
These would be for a smaller round roll.

These would be for a longer, Broethchen which I tend to use more of.

First step breading the Fisch.

Set up your breading station similar to what I have done here.
I mix the eggs with the milk and the worchestershire sauce. I mix the season salt in with the bread crumbs.
I first dip the fish in cornstarch. If the fish is not dry, the egg won't adhere to it.

Then coat with the egg mix, and then in the seasoned bread crumbs.

Fish loaded in the air fryer.

I load the Air Fryer, spray with non stick spray and then cook on 375 for 5 minutes. Flip the fish and cook another 3 minutes. The times may vary depending on your Air Fryer, so it is good to check it frequently until you find the sweet spot.

Sometimes I put them on a rack as the breading gets more contact with the hot air this way.

Fish cooked in air fryer crisp and brown.

Here are the beautiful air fried fish ready to place on the Broetchen with crisp lettuce and beautiful creamy Remoulade sauce.

 

I like to put a bit of Remoulade on the bottom bun, then the lettuce, fish chunks how ever many you want, then more remoulade, lettuce and the top bun. There are so many variations to this sandwich. You even serve it without the bun like my wife likes it.

Biography of my grandma
Emma Block
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
