My Grandma only spent a few days in Hamburg on the coast
when she was 15 and leaving for America where she had a job waiting for her.

Northern Germnay a fun place to visit,
Especially this Island off the coast,
Heligoland
Heligoland is an Island 30 to 40 miles off the coast of Germany in the North Sea with
a story as colorful as it's red cliffs.
A friend went and said they had a great time and had no idea what an
incredible place this is. You get on the ferry that runs from Cruxhaven to Heligoland,
and I first noticed as I saw the island, it was like you had transfered the red cliffs of Sedona,
to an Island in the beautiful North Sea. We were excited about what was to come that day. As they
got off the ferry onto the Island they noticed
it's really quiet!
Maybe because they don't allow private cars on the Island.
They had several great meals there. The Shrimp are great as well as the crab
and cod. Also a Fish B
Heligoland, A very special German Island in the North Sea
If your looking for a quiet place, this is a good choice, there are no private cars allowed on
Heligoland, just the sound of the ocean and the seagulls.

You don't think crab when you think Germany, but in the Heligoland a local delicacy that you have to try is called "Kneiper" which are Crab Claws.
They are differerent from the crab I am use to. But I hope to try them someday.
In this recipe as I am in an area where crab is difficult to obtain, I use the imitation crab
or Krab, Surimi, however you like to call it.
It makes a really good substitute for the wonderful
seasonings that make a good Frikadelle. Along with the nice Sirachia Remoulade, you will not call this fake at all!
Move over McDonalds, this is a specialty of the North German States
I use to order FIsh and Chips all the time in a restaurant because it was something I would never cook at home with all the deep fat frying, and mess. That has since changed with the air fryer. With a simple breading, I can air fry fish filets, and they come out nicely browned, crispy and flaky tender, without the heaviness!
I love a good fish sandwich also, and so does Germany, especially the Northern Germans that live next to a great seafood resource, the Northern Sea. They also love putting nice pickled Herring filets between a Broetchen. I am still working up the courage to try that.
This Fisch Broetchen is something I will probably have once a week, or
maybe sometimes without the Broetchen, and especially
with the sauce that beats Tartar sauce
Why would a French sauce be popular in Germany? Well lots of French culture is. Remember once Napolean ruled much of Germany. So the French brought Remoulade, a beautiful sauce, that is used with many dishes, sometimes with another popular French food Pomme Fritz.
In the US tartar sauce pretty much is the go to. Remoulade is a littkle more complex, using such ingredients like capers, boiled egg. to name a few. Some use anchovies.

...tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
I grew up with a German American father and Grandma, Eating around the table was common. I see Germans eating that way, be it cold cuts and sliced cheese in the center of the table, and broetchen on their plates, pickles, radishes and of course mustards and relishes. Build your own sandwich and catch with all the families daily plans.
Also a German family told me of another of their families traditions...
they would gather around the table and a large bowl of stewed pears and plate of Dampfnudel in the center, that you could take both and dip the Dampfnudel in the wonderful community bowl of pear juice. It is not just a meal it is a family activity and participation.
Now my German family was not from the North where this dish come from but I knew my grandma was in Bremen and Hamburg where she left to come to America. I can celebrate that event with this dish.
This is a wonderful adaption of the Black Forest Cake and is made in smaller ramekins or small dishes.
It is basically a rich chocolate cake that is undercooked slightly so the rich chocolate batter runs out when you put your fork in it and it mixes with the nice sweetened cherries.
This is a refeshing drink, on hot day, perfect for a summer evening with your toes in the grass and a nice
vintage Schlager
tune playing in the background.
I can't think of a better way to improve lemonade than this German specialty,
that started out with using lots of the ends of bottles of wine, add a bit of fizzy champagne
some lemonade and fresh mint.
The short story for it's interesting name comes from it was served at the end of the meal.
When folks already felt a bit jovial from the wine, so it was called " A Cool End" to the meal or Kalte Ende.
Well it was close to Kalte Ente which is Cold Duck!
Well that is German humor for ya.
